Lamb shoulder

DESCRIPTION:

Lamb shoulder is rather fatty and contains a fair number of bones. Most of its muscles are tougher than midsection cuts like rib or loin.
Flavor: black pepper, cinnamon, cumin, curry, lemon, garlic, red wine, rosemary, sage, vermouth, white wine.
