DESCRIPTION:

It is a boneless cut from the inside of the leg. This tender cut is pale gray-pink color and is quite versatile. It can be used for cutlets, kabobs, stews and terrines.
Flavors: bay leaves, cloves, cumin, fennel, oregano, oranges, thyme, white wine.
