Skirt steak is one of the most flavorful of all steaks. This belt-shaped flap of tender meat is cut from the beef plate primal.
Marinate at least 1 hour , or dry-rub with spices and refrigerate, wrapped in plastic, for 12 hour or overnight.
Lightly brush the steak with oil and grill over high heat, 3 to 5 min. a side for medium-rare. Wrap the meat in a double thickness of aluminum foil and allow it to rest for 15 min. Thinly slice across the grain and serve.
Skirt steak toughens if cooked to more than medium.
